Chicken Parm

Directions

  1. 1Place two chicken breasts between two sheets of plastic wrap and beat them flat.
  2. 2Prepare three bowls: one with flour, one with egg wash, and one with Panko breadcrumbs. Season all three bowls with salt, oregano, and onion powder.
  3. 3Dredge the chicken in the flour, then the egg wash, and finally the Panko breadcrumbs, pressing down hard to ensure full coverage.
  4. 4Heat olive oil in a pan for shallow frying and cook the chicken until golden brown. Remove and set aside.
  5. 5While the chicken is cooking, roughly chop one yellow onion. Add it to a pan with a little salt and olive oil, and cook until translucent.
  6. 6Add two red hot chili peppers and six cloves of garlic to the cooked onions and cook for a couple more minutes.
  7. 7Add one pound of San Marzano tomatoes to the pan with the onions, chili peppers, and garlic. Cut or smash them to help them cook faster, and cook on medium heat for about 10 minutes.
  8. 8Grate a generous amount of Parmesan cheese over the cooked chicken.
  9. 9Transfer the tomato sauce mixture to a blender, add heavy whipping cream and a pinch of salt, then blend until smooth.
  10. 10Pour half of the blended sauce back into a clean pan. Add a generous amount of mozzarella cheese and place in the oven until the cheese is melted and bubbly.
  11. 11Pour the other half of the sauce over cooked spaghetti in a separate pan.
  12. 12Add a generous amount of Parmesan cheese to the spaghetti and sauce.
  13. 13Place the cooked chicken on top of the spaghetti.
  14. 14Pour the cheesy sauce from the oven over the chicken and spaghetti.
