Directions
1
Add olive oil, a pinch of salt, garlic powder, and a pinch of black pepper to the boneless, skinless chicken thighs in a large bowl.
2
Add about half of the onion dip seasoning packet to the chicken.
3
Mix the chicken and seasonings thoroughly.
4
Wrap the seasoned chicken with saran wrap and refrigerate for about 30 minutes.
5
Lay the marinated chicken thighs flat in a hot pan.
6
Cook the chicken thighs on medium heat until fully cooked and golden brown, without burning the onion seasoning.
7
Remove the cooked chicken from the pan and set aside.
8
Add butter to the pan with the remaining fat and onion flavor.
9
Add sliced sweet onions to the pan.
10
Caramelize the onions slowly.
11
Chop the cooked chicken thighs into smaller pieces.
12
Add the chopped chicken back into the pan with the caramelized onions.
13
Add a splash of chicken broth, a sprinkle of brown sugar, and chopped garlic to the chicken and onions.
14
Cook until the broth fully evaporates, then cut off the heat and set aside.
15
In the same pan, add a little olive oil and 1 cup of rice.
16
Quickly toast the rice.
17
Pour in 2 cups of low sodium chicken broth.
18
Add the rest of the onion seasoning packet to the rice and broth.
19
Cover the pan and let the rice cook for about 15 minutes.
20
Once the rice is cooked, add milk or heavy cream.
21
Add parmesan cheese to the rice.
22
Add the cooked chicken and onions back into the pan with the rice.
23
Stir everything together until well combined.
24
Serve and enjoy.
