  2. 2Let the dough rest for 30 minutes.

  4. 4Repeat this folding process 2–3 more times, every 15–20 minutes.

  6. 6Sprinkle some flour on your counter.
  7. 7Place the dough on the counter and cut it into the sizes you prefer.
  8. 8Place the pieces on a baking paper–lined tray.
  9. 9Let them rest for another 20 minutes.
  10. 10Bake in a preheated oven at 230°C (450°F) with steam for about 15 minutes.

Ingredients

  • 400 g white bread flour
  • 350 g water
  • 35 g olive oil
  • 8 g instant dry yeast
  • 8 g salt

Equipment

Tips

  • If the dough spreads too much, you can fold it again earlier — no need to wait the full time.
  • To create steam, place a tray with hot water in the oven while it heats up, and keep it there until baking is done.
