1In a bowl mix the warm water, yeast and sugar and let it sit for 5–10 minutes until it becomes foamy.
2Add in the egg and melted butter and mix to combine.
3Gradually add the flour and spices, mixing after each cup, and once you reach about 3 cups transfer the dough to the counter and add another half cup of flour as needed.
4Knead the dough with a little olive oil until smooth.
5Place the dough into a greased bowl, cover it with plastic wrap and a towel, and let it rise for about an hour.
6While the dough rises, mix the softened butter, garlic, parsley, basil and oregano for the filling, saving about 3 tbsp to brush on top.
7Once the dough has risen, roll it out.
8Spread the garlic butter over the surface.
9Add the shredded cheeses.
10Cut the slices and roll it up tightly.
11Place them on a pan and let them rise again for 15–20 minutes.
