Filet Mignon with Red Wine Reduction Sauce

Directions

  1. 1Season the filet mignon steak with salt and pepper.
  2. 2Finely chop the red onion and garlic.
  3. 3Sear the steak in a hot cast iron skillet with olive oil until browned on all sides.
  4. 4Add garlic, red onions, and red wine to the skillet; add rosemary and thyme sprigs.
  5. 5Add beef broth, Dijon mustard, and a pat of butter to the sauce; simmer until reduced.
  6. 6Strain the sauce through a fine-mesh strainer into a mason jar.
  7. 7Slice the steak and serve over cress, topped with the strained red wine reduction sauce.
