Easy Fiber Rice

Directions

  1. 1Measure and wash 1/2 cup of green lentils, then soak them for at least 30 minutes.
  2. 2Measure 1 cup of white rice.
  3. 3Measure 1/2 cup of quinoa, preferably tri-color.
  4. 4Combine the white rice and quinoa in a strainer and rinse.
  5. 5Add the rinsed rice and quinoa to the rice cooker.
  6. 6Drain the soaked lentils and add them to the rice cooker with the rice and quinoa.
  7. 7Pour 2.5 to 3 cups of chicken stock (or desired liquid like coconut milk or vegetable stock) into the rice cooker.
  8. 8Stir the mixture in the rice cooker.
  9. 9Close the rice cooker lid and press the 'cook' button.
  10. 10Once cooked, open the rice cooker and fluff the fiber rice with a fork.

Tips
