Directions

1Peel the potatoes.
2Place the peeled potatoes into a pot of water.
3Slice the onion.
4Cut the ribeye steak into bite-sized pieces.
5Pour olive oil into a pan and add the sliced onions.
6Cook the onions until caramelized.
7Chop chives.
8Melt a stick of unsalted butter in a pan.
9Add paprika, cayenne, chili flakes, Dijon mustard, lemon zest, chopped parsley, and chopped chives to the melted butter.
10Whisk the cowboy butter mixture until well combined.
11Use a potato ricer to mash the cooked potatoes into a bowl.
12Add roasted garlic, butter, and heavy cream to the mashed potatoes.
13Mash and mix all ingredients for the mashed potatoes.
14Sear the steak bites in a pan.
15Flip the steak bites to sear on all sides.
16Open a bottle of Ruffino Chianti.
17Pour the red wine into a glass.
18Spread mashed potatoes on a plate.
19Top the mashed potatoes with caramelized onions.
20Place the seared steak bites on top of the caramelized onions.
21Spoon the cowboy butter over the steak bites.
