1Chop up one medium onion and two jalapeños (remove seeds).
2In a large bowl, add 1 1/2 cups of self rising cornmeal, 1 teaspoon of baking soda, 1 tablespoon of salt, 1 can of cream style corn, 1 cup of milk, 2 eggs, and 1/3 cup of shortening.
3Whisk all ingredients together.
4In a frying pan, brown 1 pound of ground beef with your preferred seasoning (the video uses SPG by Kosmos Q).
5In another pan, sauté the chopped onions and jalapeños in olive oil until softened.
6Add the cooked vegetables to the cooked ground beef and mix together.
7Spray a 9x13 baking dish with nonstick spray.
8Pour half of the cornmeal mixture into the prepared baking dish.
9Layer the meat, onion, and pepper mixture over the cornbread batter.
10Add 8 ounces of shredded sharp cheddar cheese.
11Pour the remaining half of the cornmeal mixture over the cheese.
