Cowboy Cornbread Casserole

Directions

  1. 1Cook chopped bacon in a large skillet over medium heat.
  2. 2Remove the cooked bacon and set it aside, draining the grease from the pan.
  3. 3In the same pan, brown ground beef with diced onions, peppers, and minced garlic.
  4. 4Season the meat mixture with Lipton onion soup mix, garlic powder, onion powder, black pepper, and Slap Ya Mama Cajun seasoning.
  5. 5Add chili beans, fire-roasted diced tomatoes, diced chilies, and drained corn to the pan.
  6. 6Add the cooked bacon back into the pan and mix everything thoroughly.
  7. 7Prepare two boxes of Jiffy corn muffin mix according to the package directions.
  8. 8Top the meat mixture with shredded sharp cheddar cheese and shredded pepper jack cheese.
  9. 9Pour the prepared cornbread batter over the cheese and spread it out to the sides using a rubber spatula or spoon.
  10. 10Optionally, top the cornbread with sliced jalapeños.
  11. 11Bake at 375°F for 35 to 40 minutes, or until the cornbread is cooked through.
