Sheet Pan Garlic Parmesan Chicken and Potatoes

Directions

  1. 1In a bowl, combine the chicken, seasonings, lemon juice, garlic, and mayonnaise.
  2. 2Mix well and marinate for as long as you wish (up to overnight).
  3. 3Preheat your oven to 375°F (190°C).
  4. 4Add the potatoes to a large casserole dish.
  5. 5Toss with the melted butter, parmesan, olive oil, garlic, and seasonings.
  6. 6Spread evenly.
  7. 7Top with the chicken thighs.
  8. 8Add the red onion chunks around the dish & drizzle them with olive oil.
  9. 9Slice the tops off the garlic heads, drizzle with olive oil and salt, wrap in foil, & place in dish.
  10. 10Bake for 40 mins.
  11. 11Broil for the last 2–3 mins if desired.
  12. 12Optional but recommended: Mix together mayo, parmesan, and paprika.
  13. 13At the 20-min mark, baste the chicken & return to the oven.
  14. 14In a bowl, combine the yogurt, mayo, lemon juice, salt, pepper, and chives.
  15. 15Squeeze in as much of the roasted garlic as you wish OR chop them up first.
  16. 16Mix.
  17. 17Finish with fresh parm, chives, & lemon slices.

Tips

  • Marinate chicken for as long as you wish (up to overnight).
  • Broil for the last 2-3 minutes for crispiness.
