2Add ginger powder, spring onions, chicken stock paste, half a can of beer, and salt to the bowl with chicken thighs.
3Mix and cover the chicken with milk.
4Leave in the fridge for at least one hour (preferably overnight).
5Make the sauce by mixing ketchup, Korean chilli paste, low strength chilli powder, light soy, chicken stock paste, few drops of lemon water, honey, and water.
6Prepare the flour mix by combining plain flour, rice flour, half portion of corn flour, and a tiny bit of bicarb soda.
7Drain the milk from the chicken and coat the chicken in the flour mix.
8Fry chicken in 150°C oil for 4 minutes, then take it out.
9Heat oil to 170°C and fry chicken for 30 seconds.
10Heat the sauce until it boils.
11Add the fried chicken to the boiling sauce and coat it evenly.
