1Make the marinade: Combine yogurt, minced garlic, ginger paste, lemon juice, salt, and half of the spice mix.
2Marinate the chicken breast for at least 1 hour, or preferably overnight.
3Make the masala sauce: Sauté onions until translucent, then add minced garlic, ginger paste, and tomato paste. Simmer for a minute, then add the remaining spice mix, canned tomatoes, water, and cilantro. Simmer for 10-15 minutes.
4Blend the masala sauce until completely smooth.
5Add low-fat Greek yogurt, butter, cilantro and salt to taste to the sauce, and mix well.
6Grill or broil the marinated chicken until charred, approximately 10 minutes. Dice the chicken into small pieces.
7Add the diced chicken to the masala sauce and simmer for 15-20 minutes.
8Mix in cooked basmati rice (cooked in chicken bone broth for extra protein and flavor, optional).
9Assemble the burritos: Spoon the chicken mixture onto burrito tortillas, add cilantro, roll tightly and wrap in foil.
10Store the burritos frozen for meal prep.

Tips

Ideally grill chicken to get char, but broiling works too.
Refrigerate meat/rice mixture for ~20 minutes before assembling burritos to help thicken and make rolling easier.
