1In a pan, sauté 3-4 cloves of garlic and 1 small shallot.
2Add 5 ounces of chopped spinach and cook until wilted.
3Stir in 6 ounces of cream cheese, 1 teaspoon of Tony’s No Salt seasoning, 1 teaspoon of red pepper flakes, and 1/2 cup of Parmesan cheese until melted.
4Add 4-5 slices of cooked bacon and mix well.
5Set aside to cool.
6Season the salmon fillets with smoked paprika, Old Bay seasoning, and garlic powder.
7Make a pocket in the center of each salmon fillet and fill with the cooled spinach and cheese mixture.
8Sear the salmon fillets in avocado oil until lightly browned on each side.
9Bake in the oven at 375°F until the internal temperature reaches 145°F.
10Prepare the lemon butter glaze by combining 1/3 cup of honey, 1/2 stick of butter, lemon zest, and lemon juice in a saucepan.
