Grease and fully line two 7.75 × 3.75-inch loaf pans.

Whisk all dry ingredients for the coffee cake.

Whisk sugars and wet ingredients for the coffee cake until smooth.

Fold dry into wet just until combined; set aside.

Thaw peaches in a sieve for 30-45 minutes; press out liquid until 220-240 g drained peaches remain.

Cook peaches with sugar, cornstarch, and salt for 3-5 minutes until glossy and lightly thickened. Cool fully.

Mix all-purpose flour, sugars, and salt for the streusel.

Stir in melted butter until large damp clumps form for the streusel.

Divide coffee cake batter between pans, filling each about one-third full.

Add a thick streusel layer and lightly press it.

Spoon half the peaches per loaf.

Cover with remaining batter.

Finish with a very generous streusel layer.

Bake for 45 minutes.

Tent the loaves and bake for 10–15 more minutes until the cake center reaches 205-210°F.

Cool for 20 minutes in pans.

Remove from pans and cool completely.

Whisk powdered sugar, non-dairy milk, vanilla bean paste, and fine sea salt for the glaze.

180 g powdered sugar, sifted
60 g non-dairy milk, room temperature

1 Pinch fine sea salt

Tips
