Directions

  1. 1Combine 2/3 cup of melted and cooled butter, 2/3 cup of brown sugar, 2 teaspoons of vanilla extract, and 1 egg together.
  2. 2Whisk 4 tablespoons of cocoa powder into 1 cup of flour.
  3. 3Add the flour mixture to the wet ingredients and combine them together.
  4. 4Transfer the mixture to the bottom of your 8x8 prepared pan.
  5. 5Press the crust firmly into the bottom, making sure it extends to reach all the corners.
  6. 6Combine 2 cups of shredded coconut, 1 can of sweetened condensed milk, and 1 teaspoon of vanilla extract together.
  7. 7Spread the coconut mixture on top of the crust, ensuring all of the crust is covered.
  8. 8Bake in the oven at 350 degrees for 30 minutes.
  9. 9Let them fully cool in their pan on a wire cooling rack.
  10. 10Combine 1/4 cup of softened butter, 2 cups of powdered sugar, 3 tablespoons of milk, 3 tablespoons of cocoa powder, and a healthy splash of vanilla extract.
  11. 11Mix well, scraping the bowl down, as this is meant to be a very thick, stiff frosting.
  12. 12Make sure the base is entirely cool before adding the frosting.
  13. 13Spread the frosting over the cooled base.
  14. 14Chill in the fridge for at least an hour, or a couple of hours, before cutting them.
