Start with ground beef.

Add tender quick salt, mustard seed, garlic powder, liquid smoke, pepper, and sugar to the ground beef.

Mix the ingredients up really well.

Divide the mixture in half and roll it into two logs.

Wrap the logs in plastic and refrigerate for at least 24 hours.

After 24 hours, unwrap the logs.

Poke holes in the bottom of the rolls.

Place them on a baking sheet (or roasting rack in a shallow roasting pan).

Bake them at 275 degrees F for 2 hours.

Let it cool completely.

Refrigerate until you're ready to serve.

Slice and serve with cheese, crackers, and something briny for the perfect bite.
