1Sauté onions and garlic in a pan with vegetable oil over medium heat for 3-4 minutes until fragrant.
2Add rice to the pan, stirring to brown it without burning.
3Add tomato sauce, chicken broth, and seasonings to the rice. Stir and cover with a lid, then let it simmer on medium-low heat for 20-30 minutes until the water has evaporated.
4While the rice is cooking, season chicken breasts with olive oil, garlic powder, onion powder, chili powder, cumin, paprika, salt, and pepper.
5Add the seasoned chicken to a pan over medium-high heat and sauté until it reaches an internal temperature of 165°F.
6Once the rice is done, fluff it.
7Finish cooking the chicken and add it to the rice.
8Pour Gordo's cheese dip over the chicken and rice.
9Top with cilantro and serve.
