The Best Guacamole

Directions
- 1Place two cloves of garlic, a rough-chopped jalapeño or serrano, and about one-third of the finely diced white onion into a molcajete.
- 2Squeeze a little bit of lime juice over the ingredients.
- 3Add a pinch of salt.
- 4Slowly start working this down until it becomes a nice paste.
- 5Cut the avocado into a swift circular motion and twist.
- 6Carefully jam the knife into your seed and twist to remove it.
- 7Using a metal spoon, scoop the avocado out of its skin.
- 8Add the avocado to the molcajete with the remaining onion and lots of fresh cilantro.
- 9Give it a quick, gentle mash.
- 10Squeeze more lime juice on top of the guacamole.
- 11Quickly and gently quarter the corn tortillas.
- 12Drop the tortilla pieces into some hot oil to fry.
- 13Drain the fried chips on a paper towel.
- 14Season with a little bit of salt and dust with birria seasoning.

Tips
- You can easily do this step in a blender.
- The riper the avocado, the more it springs back when pressed.
- Doing the lime at the end prevents it from oxidizing.
