Get a big skillet over medium-high heat.

Add in oil and 1 pound of chicken breast, minus any weird spots.

Season the chicken with salt, pepper, chili powder, cumin, and dried cilantro, and cook until it is cooked through.

Add in 1 can of Rotel and 1 can of tomato sauce.

Add some minced garlic, 1 cup of rinsed rice, and 1.5 cups of chicken broth.

Stir it all together and bring the skillet to a boil.

Throw on the lid and cook on medium-low heat for about 15-20 minutes or until rice is cooked.

Once the rice is cooked, fluff it up with a fork.

Top with your favorite cheese.

Pop in the oven for just a couple minutes to get it melted or let it melt in the skillet.

When you pull it out, sprinkle on some cilantro, unless you're one of those cilantro tastes like soap people, you could skip that part.

8 oz can tomato sauce
1.5 cups chicken broth
1 cup long grain white rice, uncooked & rinsed
2 cups shredded Colby Jack cheese

Tips
Make sure to bring the whole skillet to a boil after adding liquids and rice.
Stir the rice once about halfway through cooking.
Sprinkle on cilantro unless you dislike the taste.
