Slice the beef chuck into large cubes for more browning and maximum flavor.

Sear the beef in a very hot oiled pan until a deep brown color is achieved.

Remove the beef from the pan.

Char an onion and some garlic in the same pan.

In a blender, add fire roasted tomatoes.

Add chipotle peppers in adobo or chipotle sauce to the blender.

Add soaked New Mexico and ancho chilis to the blender.

Carefully add the charred onions and garlic to the blender.

Add oregano, paprika, chili powder, salt, and pepper to the blender.

Blend the ingredients until smooth.

Drop the seared beef into a slow cooker, pressure cooker, or Crock-Pot.

Smother the beef with the blended sauce mixture.

Cover the slow cooker and cook on low and slow until the meat shreds like butter.

While the beef is cooking, squeeze mayonnaise on top of corn.

Sprinkle chili powder on the corn and mayonnaise mixture.

Add a lot of cotija cheese to the corn mixture.

Squeeze lime juice over the corn mixture.

Mix the corn ingredients together.

Fry corn tortillas in hot oil until crispy, or use a pre-made tostada shell.

Smear each tostada with a little avocado and lime.

Pile the chipotle beef on top of the avocado layer on each tostada.

Add the corn mixture on top of the beef.

1 can Chipotle sauce
3 ancho chilis
3 New Mexico chilis
0.5 cup chili water
0.25 cup white vinegar
2 tsp cumin
1 tbsp chili powder
1 tbsp smoked paprika
1 tbsp oregano
2 tbsp salt
30 oz canned corn
0.33 cup mayo
0.25 cup cotija cheese
1 tsp chili powder
1 juice lime
salt
1 cup Mexican crema
0.25 cup Chipotle hot sauce
1 tbsp honey
0.5 tsp chili powder
0.5 tsp paprika
salt
tostadas or fried corn tortillas

Chipotle sour cream

Tips
Sear the beef to a deep brown color for maximum flavor.
