1Season the chicken generously with salt, pepper, and lime.
2Sear all sides of the chicken until golden and cooked through.
3Set the cooked chicken aside.
4In the same pan, sauté chopped onions.
5Add rice and water or broth (1:1 ratio, but varies with rice type).
6Scrape off all the flavor stuck to the pan.
7Add salt, pepper, lime, and cilantro to the rice mixture.
8Bring the rice mixture to a boil.
9Once boiling, cover the pan and turn the heat to the lowest setting.
10Do not lift the lid until the rice is cooked, approximately 10 to 15 minutes.
11Fluff the cooked rice.
12Layer the chicken on top of the rice and drizzle its juices all over.
13Cover the pan and let it sit for another 5 minutes.
14Prepare the chimichurri by chopping cilantro and mixing it with oil, vinegar (red wine), salt, and red pepper flakes. Adjust ratio according to taste.
