Directions

  1. 1Heat milk in a saucepan until it just starts to bubble, then reserve.
  2. 2Beat egg yolks and sugar in a mixer until pale, yellow, and luminous.
  3. 3Slowly add the warm milk to the yolk and sugar mixture while mixing.
  4. 4Add flour to the batter.
  5. 5In a separate clean mixer bowl, whisk egg whites and sugar just until they reach soft peaks that fold over on themselves.
  6. 6Fold the soft-peak egg whites into the main cake batter.
  7. 7Pour the batter into a cake pan and bake at 325 degrees for 50-55 minutes.

Tips

  • Avoid whipping egg whites to stiff peaks; stop at soft peaks so they don't deflate or get over-whipped when incorporated into the batter.
  • The whites should not be stiffer than the batter they are being folded into.
