Preheat the oven to 350°F (175°C).

In a bowl, mix together 1 cup of flour, 1 cup of protein, 1/4 tsp baking powder, and 1/4 tsp baking soda.

In a separate bowl, cream together 3/4 cup of softened butter, 1/2 cup stevia, 1 whole egg, 1 egg white, and 1 tsp of vanilla extract.

Combine the dry ingredients with the wet ingredients and mix until well combined.

Roll the dough into small balls and coat them with flour to prevent sticking.

Roll out the dough and use cookie cutters to create desired shapes.

Sprinkle the cookies with sprinkles.

Bake at 350°F for 5-8 minutes.

Tips
Use a baking protein. Not all proteins are good for baking.
Make sure the butter is at room temperature. If not, microwave it for about 40 seconds.
Roll the dough into balls to keep them moist and prevent crumbling.
Use protein frosting or peanut butter for a healthier option instead of regular frosting
