Directions

  1. 1Make the sauce by combining dark soy sauce, regular soy sauce, oyster sauce, mirin, sugar, and rice wine vinegar in a bowl and set it aside.
  2. 2Bring a pot of water to a boil and add your udon noodles.
  3. 3Stir gently until noodles become separated, then drain and rinse in cold water.
  4. 4Add 1 tbsp of oil of choice to a pan and heat it over medium heat.
  5. 5Fry tofu pieces first if using fried tofu, then remove.
  6. 6Add your vegetables from hard to soft to the pan (bok choy stems, mushrooms, bok choy leaves).
  7. 7Add your tofu and noodles to the pan.
  8. 8Add the sauce (adjusting amount to your preference) and stir fry until well combined.
  9. 9Serve and enjoy!
