Add half a red onion and a full diced red bell pepper to the pan.
Cook the vegetables for about 10 minutes until softened.
Add some chopped sun-dried tomatoes and a big scoop of garlic.
Cook all together for just a minute or two.
Add a few tablespoons of tomato paste.
Fry all ingredients down for about 4 or 5 minutes together to let the tomato paste caramelize.
Season with a little bit of salt, some black pepper, a little bit of Italian seasoning, and some crushed red pepper flakes.
Add about a cup of salted pasta water that was saved.
Add a healthy splash of heavy cream.
Once this comes up to a simmer, add the pasta (cavatappi or any preferred type).
Add smoked paprika.
Cut the heat.
Stir in some grated Asiago cheese.
