French Onion Pasta

Directions

  1. 1Slice onions and sauté in a pan with oil and butter, cooking for 10-15 minutes until browned, deglazing periodically with a splash of water.
  2. 2Add pancetta to the pan and fry until crispy, then stir in minced garlic.
  3. 3Deglaze with white wine, then season with salt, thyme, and rosemary.
  4. 4Add dry pasta and beef broth, then simmer until the pasta is cooked through.
  5. 5Stir in heavy cream and parmesan.
  6. 6Top with shredded gruyere and melt until bubbly using a culinary torch.
