Directions
1
In a large mixing bowl, whisk together all-purpose flour, baking powder, and granulated sugar until combined.
2
Grate cold butter directly into the dry mixture using a cheese grater.
3
Use your hands to gently toss and rub the butter into the flour until it forms a mealy, crumbly texture with pea-sized pieces of butter.
4
In a separate small bowl, whisk together an egg and eggnog until smooth.
5
Pour the egg-eggnog mixture into the dry ingredients and stir just until the dough comes together.
6
Fold in white chocolate chips and fresh cranberries.
7
Turn the dough onto a parchment-lined baking sheet and gently pat it into a 9-10 inch circle, about 1 1/2 inch thick.
8
Cut the dough into 8 scones (triangles or squares).
9
Brush the tops of the scones with heavy cream.
10
Bake at 350°F for 22-25 minutes, or until lightly golden and baked through.
11
Top with an eggnog glaze, which is just simple and perfect.
