Soften 150g of butter in the microwave for about 15 seconds until very soft but not warm.

Add 75 grams of soft dark brown sugar to the butter.

Add 225 grams of mincemeat to the mixture.

Add three eggs to the ingredients in the bowl.

Stir these ingredients together really well before adding the flour.

Add 240 grams of flour and two generous teaspoons of baking powder to the mixture.

Mix the flour and baking powder into the mixture until well combined; the mixture will be quite stiff.

Line an 18x25cm tray with parchment paper.

Scoop the mixture into the prepared tray, ensuring it is evenly spread.

Place the tray into a preheated 160°C oven.

Bake for half an hour until it rises nicely and is cooked through.

Tips
Line the tray with parchment paper.
Bake for thirty minutes, checking with a skewer that it’s done.
Keeps well and freezes perfectly.
