Directions

Wash, peel, and dice the apples.

Pour the diced apples into a pot.

Add water to the pot with the apples.

Cook the apples over medium heat until soft for about 10-15 minutes.

Blend the cooked apples until smooth using an immersion blender.

Pour the apple puree into a mixing bowl.

Add instant gelatin to the apple puree and mix well.

Let the mixture cool to room temperature.

Beat the mixture with a stand mixer on high speed for approximately 20 minutes.

Transfer the whipped mixture into a baking dish lined with parchment paper.

Smooth the top of the pastila with a spatula.

Cover the dish with plastic wrap.

Refrigerate for 2-3 hours until set.

Remove the pastila from the dish and parchment paper.

Cut the pastila into squares.

Tips
Initially, it might seem like nothing is happening, but around the twentieth minute of mixing, the mass will start to change, increasing in volume by about 2-3 times and turning white.
