Directions

  1. 1Make the filling: In a bowl, mix egg white, sugar, vanilla and raisins. Add the curd cheese and mix well. Refrigerate.
  2. 2Prepare the dough: In a large bowl, mix warm milk, yeast, salt, sugar, melted butter and egg. Add flour and mix to form a sticky dough. Make a single fold and let rest for one hour.
  3. 3After the first rest, perform another fold and let the dough rise for an hour.
  4. 4Divide the dough into six equal pieces and shape them into round balls. Dip each ball in flour and place them on a baking tray lined with nonstick baking paper. Cover and let proof for one hour.
  5. 5Preheat your oven to 260°C (500°F) with fan. Once the dough balls have puffed up nicely, give them a final shaping: gently stretch the dough creating a thick edge and a thin membrane in the middle. Push your thumbs in and rotate to create the desired shape.
  6. 6Brush the dough with egg yolk and milk glaze. Pipe or spoon the filling evenly into the center of each dough ball.
  7. 7Bake for 20-25 minutes until the buns are golden brown. Cool on a rack before serving.
