Cheddar Cheese Scones

Directions

  1. 1Add a pinch of salt to the flour.
  2. 2Add two heaped teaspoons of baking powder to the flour.
  3. 3Sieve the flour mixture into a clear bowl.
  4. 4Grate 75g of salted frozen butter into the flour mixture.
  5. 5Mix the butter into the flour using your fingertips.
  6. 6Add 150g of grated cheddar cheese to the mixture and mix it in with your fingertips.
  7. 7Pour 250ml of buttermilk into the mixture.
  8. 8Mix the ingredients with a wooden spoon until a dough forms.
  9. 9Dust a clean surface with flour.
  10. 10Place the dough onto the floured surface and gently shape it into a ball.
  11. 11Roll the dough down to about 2.5 to 3 centimeters thick using a rolling pin.
  12. 12Use a cutter to cut out the scone shapes, pressing down without twisting.
  13. 13Place the cut scones on a baking tray lined with parchment paper.
  14. 14Prepare the egg wash by adding a pinch of sugar and a pinch of salt to an egg yolk in a small bowl and mixing it with a fork.
  15. 15Brush the egg wash over the top of each scone.
  16. 16Finely cut some grated cheese.
  17. 17Sprinkle the finely cut cheese on top of each scone.
  18. 18Chill the scones for 30-60 minutes before baking.
  19. 19Bake the scones at 200°C for 15-18 minutes until golden brown.

Tips

  • Use a 6cm cutter for the scones.
  • Chill the scones for 30-60 minutes before baking; the longer, the better.
  • Bake the scones at 200°C in a conventional oven for 15-18 minutes.
