Preheat oven to 180 degrees.

In a large mixing bowl add the eggs, cottage cheese and diced bacon.

Mix well.

Spray two large baking dishes with oil spray.

Evenly portion the mix into the two large baking dishes.

Pop in oven for 25 minutes.

Meanwhile, cut the English muffins in half.

Add butter on one side.

Once the egg mix is cooked, remove and once cooled cut into pieces big enough to place onto the English muffins.

Add half a piece of cheese onto each English muffin and a squeeze of bbq sauce.

Top the muffin and wrap up!

You can keep these in the fridge up to 3 days but after that place them into the freezer.

12 eggs
500 g cottage cheese
500 g diced bacon
12 slices tasty cheese
Bbq sauce
Butter
Alfoil or baking paper to wrap

Tips
Making a huge batch and freezing them is the best way to keep bellies full, feel organised and save money.
Once frozen, put oven on 140 degrees to defrost.
