Directions

  1. 1Preheat oven to 180 degrees.
  2. 2In a large mixing bowl add the eggs, cottage cheese and diced bacon.
  3. 3Mix well.
  4. 4Spray two large baking dishes with oil spray.
  5. 5Evenly portion the mix into the two large baking dishes.
  6. 6Pop in oven for 25 minutes.
  7. 7Meanwhile, cut the English muffins in half.
  8. 8Add butter on one side.
  9. 9Once the egg mix is cooked, remove and once cooled cut into pieces big enough to place onto the English muffins.
  10. 10Add half a piece of cheese onto each English muffin and a squeeze of bbq sauce.
  11. 11Top the muffin and wrap up!
  12. 12You can keep these in the fridge up to 3 days but after that place them into the freezer.

  • 12 slices tasty cheese
  • Bbq sauce
  • Butter
  • Alfoil or baking paper to wrap

  • Making a huge batch and freezing them is the best way to keep bellies full, feel organised and save money.
  • Once frozen, put oven on 140 degrees to defrost.
