Directions

  1. 1Pre-heat the oven to 150C.
  2. 2Grease the loaf tin with butter and line with baking paper.
  3. 3Make up the hot tea, then pour into a large mixing bowl.
  4. 4Add the malt extract, sugar, and dried fruit, then stir well.
  5. 5Add the beaten eggs to the mixture and stir well.
  6. 6Add the flour, baking powder, and bicarbonate of soda to the mixture and stir until combined.
  7. 7Pour the mixture into the prepared loaf tin and bake in the oven.
  8. 8While warm, brush the top of the loaf with extra malt extract.

Ingredients

  • to taste for greasing butter, softened
  • 150 ml black tea
  • 175 g barley malt extract
  • 85 g dark muscovado sugar
  • 300 g dried mixed fruit
  • 2 whole egg
  • 250 g plain flour
  • 1 tsp baking powder
  • 0.5 tsp bicarbonate of soda

Tips

  • Use a 2lb loaf tin.
  • Let the loaf sit in an airtight container for 2 days to develop the flavour and make it stickier.
  • Serve with butter and jam.
