In a large mixing bowl, combine 150ml of lukewarm water and 150ml of milk.

Add 30g of fresh yeast (or 3 1/2 tsp of instant yeast).

In a separate bowl, mix 500g (or 4 cups) of bread flour with 10g of yeast.

Pour the flour mixture into the mixing bowl with the wet ingredients.

Add 1 tsp of salt and 1 tsp of sugar.

Add 2 tbsp of softened butter.

Mix all ingredients together using a stand mixer for 12 to 15 minutes, until you get a smooth, slightly sticky dough.

Lightly flour your work surface and turn the dough out onto it.

Divide the dough into 8 equal pieces.

Shape each piece into a smooth ball.

Place the dough balls close together on a baking tray lined with baking paper.

Cover the dough balls with a clean kitchen towel and allow them to proof for 45 minutes to 1 hour.

Once proofed, dust the tops of the baps with flour.

Bake the baps in a preheated oven at 220°C for 25 minutes, or at 230°C for a darker crust.
