1Whisk together peanut butter, coconut milk, maple syrup, sriracha, sesame oil, soy sauce, salt, pepper, garlic, ginger, and lime juice in a large bowl. Set aside.
2Heat a cast iron pan over medium-high heat for 2-3 minutes. Place 4 tofu cubes on each skewer.
3Add oil to the pan and sear the tofu, seasoning with salt and pepper. Sear on all four sides, about 1-2 minutes per side, until golden brown.
4Pour half the peanut sauce over the tofu in the pan. Continue to flip and sear for another 1-2 minutes per side.
5Serve tofu skewers over rice. Finish with extra peanut sauce, cilantro, scallion, crushed peanuts, sesame seeds, and chili crisp.
