JAMAICAN FISH TEA (SOUP)

Directions

  1. 1Pour 3-4 cups of water into a pot and bring to a boil.
  2. 2Add 1 tablespoon of pimento seeds.
  3. 3Add 1 tablespoon of fish seasoning.
  4. 4Add 3-4 cloves of garlic.
  5. 5Add 2 stalks of fresh thyme.
  6. 6Add 1/2 cup of pumpkin (cut into cubes).
  7. 7Cover the pot and boil until the pumpkin has softened.
  8. 8Add 1/2 yellow yam (cut into cubes), 2 small Irish potatoes (cut into cubes), and 2 corn on the cob (cut into half moons).
  9. 9Add dumplings at this stage if you choose to.
  10. 10Add 1-2 chopped carrots.
  11. 11Add 1 chopped cho-cho.
  12. 12Add 1-2 scotch bonnet peppers.
  13. 13Sieve in 1/2 pack of fish tea soup mix.
  14. 14Stir the soup.
  15. 15Add the fish (snapper).
  16. 16Stir gently to incorporate the fish.
  17. 17Cover the pot and cook on medium/high heat.
  18. 18Remove fish bones (this is optional).
  19. 19Add 8 chopped okra and allow a few minutes to soften.
  20. 20Stir the soup.
  21. 21Serve the Jamaican fish tea in a bowl.
  22. 22Garnish with a scotch bonnet pepper and chopped green onions.

  • 1 whole snapper fish
  • 8 whole okra

Tips

  • Traditionally, in Jamaica, go bell or kingfish head are used for fish tea.
