Pour 3-4 cups of water into a pot and bring to a boil.

Add 1 tablespoon of pimento seeds.

Add 1 tablespoon of fish seasoning.

Add 3-4 cloves of garlic.

Add 2 stalks of fresh thyme.

Add 1/2 cup of pumpkin (cut into cubes).

Cover the pot and boil until the pumpkin has softened.

Add 1/2 yellow yam (cut into cubes), 2 small Irish potatoes (cut into cubes), and 2 corn on the cob (cut into half moons).

Add dumplings at this stage if you choose to.

Add 1-2 chopped carrots.

Add 1 chopped cho-cho.

Add 1-2 scotch bonnet peppers.

Sieve in 1/2 pack of fish tea soup mix.

Stir the soup.

Add the fish (snapper).

Stir gently to incorporate the fish.

Cover the pot and cook on medium/high heat.

Remove fish bones (this is optional).

Add 8 chopped okra and allow a few minutes to soften.

Stir the soup.

Serve the Jamaican fish tea in a bowl.

Garnish with a scotch bonnet pepper and chopped green onions.
