Garlicky Lemon Chicken Arayes

Directions

  1. 1Prepare the paste: chop a shallot, garlic, Serrano pepper, parsley (or other preferred herb like cilantro or dill). If you don't want to chop, blend everything into a smooth paste.
  2. 2Add extra virgin olive oil, the juice of one lemon, and salt to the chopped ingredients or paste, then blend until smooth.
  3. 3In a bowl, combine 1 pound of ground chicken with the prepared paste, lemon zest, paprika, turmeric, and cumin. Mix well.
  4. 4Slice fluffy pita in half and open them up.
  5. 5Stuff the meat mixture inside the pita pockets.
  6. 6Heat 2 tablespoons of olive oil in a pan.
  7. 7Place the stuffed pita pockets meat side down in the hot pan to sear.
  8. 8Flip the pita pockets to sear the other side.
  9. 9Once both sides are seared, transfer the arayes to the oven for a few more minutes to finish cooking through.
