Serves 8

Directions

  1. 1Add 1 tablespoon of granulated sugar to focaccia dough.
  2. 2Swap olive oil for vegetable oil in the tray.
  3. 3Proof the dough as normal, dimple, and bake. It might need a few minutes less in the oven.
  4. 4Fill a piping bag with 1 cup of jam (raspberry jam is used in the video).
  5. 5Make the glaze by whisking together 1 cup of confectioners' sugar, 2 tablespoons of milk, and 1/8 teaspoon of vanilla extract.
  6. 6Once the focaccia is out of the oven, let it cool for five minutes.
  7. 7Poke holes into the focaccia using a thick straw.
  8. 8Fill the holes with jam from the piping bag.
  9. 9Place the cooling rack on a larger tray, drizzle the glaze over the focaccia, and brush it evenly on top and sides.
  10. 10Rub the bottom of the focaccia into the excess glaze.
  11. 11Place the focaccia on a cooling rack and allow the glaze to harden for at least 30 minutes before cutting and serving.
