Directions

  1. 1Start with 1 pound of turkey sausage into a hot pan and break it up as it cooks.
  2. 2Once the turkey sausage is done cooking, kill the heat and let that cool off.
  3. 3In a large mixing bowl, combine 4 cups of Kodiak pancake mix, 3 cups of skim milk, 4 whole eggs, a teaspoon of vanilla extract, and cinnamon to taste.
  4. 4Whisk all the pancake batter ingredients together.
  5. 5Add the cooked turkey sausage and 2 cups of blueberries to the pancake batter.
  6. 6Gently fold the ingredients in until well combined.
  7. 7Add your pancake mixture to a lightly greased 9x13 baking dish.
  8. 8Top with a few more blueberries for aesthetic.
  9. 9Bake in the oven at 375°F for about 30 to 40 minutes, ensuring the middle is cooked through.
  10. 10Let the casserole cool off.
  11. 11Divide the casserole into six servings and place into meal prep containers.
