1Add ½ cup of diced onions and one diced jalapeño to a hot oiled pan and sauté for a couple of minutes.
2Add five cloves of minced garlic and one teaspoon of ginger, stir and sauté for a minute or so.
3Add one pound of ground beef, break it up, and brown it.
4In a small bowl, whisk together three tablespoons of coca aminos (or soy sauce), two tablespoons of hoisin sauce, ½ tablespoon of rice wine vinegar, one teaspoon of sugar, some sriracha, and a pinch of black pepper.
5Pour the sauce over the browned ground beef and stir.
6Cook for a minute or two.
7Add two cups of frozen mixed veggies and stir.
8Cook the vegetables for about four minutes.
9Add two cups of cooked rice (preferably day-old) and stir until combined.
10Add three scrambled eggs and stir until everything is combined and heated through.
11Serve in a bowl and garnish with chopped green onions and toasted sesame seeds.
