Cajun Chicken and Sausage Orzo

Directions

  1. 1Season 1 pound of chicken breast with garlic powder, onion powder, and Cajun seasoning, flipping to coat both sides.
  2. 2Brown the seasoned chicken in a skillet with olive oil until cooked through, then remove.
  3. 3Slice 1 pound of smoked sausage.
  4. 4Toss the sliced smoked sausage into the same skillet and cook until browned.
  5. 5Once the meat is browned and cooked through, remove it from the skillet.
  6. 6Dice an onion.
  7. 7Add the diced onion to the skillet with more olive oil if needed and sauté until soft and caramelized.
  8. 8Add three cloves of minced garlic to the skillet with the sautéed onion and cook until fragrant.
  9. 9Pour in 1 and a half cups of orzo and toast for a couple of minutes.
  10. 10Add three cups of chicken broth, bring to a boil, and let it simmer until the orzo is tender and most of the liquid is absorbed.
  11. 11Pour in half a cup of heavy cream.
  12. 12Add half a cup of shredded Parmesan cheese and stir until the mixture is creamy.
  13. 13Throw the cooked chicken and sausage back into the creamy orzo mixture and mix everything together.
