Peel fresh corn and slice it off the cob.

Use the back of your knife to get all the extra bits of corn.

Add chopped bacon to a pot and cook until crispy.

Remove the crispy bacon from the pot.

Add one chopped onion to the pot.

Add the light parts of the green onion to the pot.

Add some potatoes to the pot.

Stir for 5 minutes.

Add the corn to the pot.

Add a couple of cloves of chopped garlic to the pot.

Season with salt and pepper.

Deglaze with a cup of dry white wine.

Add a whole box of chicken broth.

Bring to a bubble.

Simmer with a bay leaf for about 15 minutes until the potatoes are softened.

Remove the bay leaf.

Blend some of the soup.

Add the blended soup back into the pot.

Add a whole package of garlic and herb Boursin cheese.

Stir until the cheese is melted.

Top with bacon.

Top with green onion.
