1Wash the potatoes well, cut in half or quarters depending on the size.
2Boil them until they have slightly softened, you should be able to pierce them with a knife but should still require cooking.
3Preheat your oven to 180 degrees Celsius.
4Remove the potatoes from the heat and place in a mixing bowl along with salt, paprika, and 1/4 cup of olive oil.
5Toss well to combine and place in a baking dish.
6Bake for approximately 30 minutes until they begin to crisp, then turn the heat up to 200 degrees Celsius and bake on high for the remaining 15 minutes.
7To make the dressing, place the garlic in a mortar and pestle along with salt and crush.
8Add the crushed garlic to a bowl along with the chopped coriander, dill, 1/2 juiced lemon, 1 tsp chilli in oil, 1 fresh chilli (optional), 2 TBS olive oil, and cracked pepper.
9Mix to combine the dressing ingredients well.
10Once the potatoes have finished roasting, add them to a bowl along with the dressing and toss to combine.
11Serve immediately.
