1Place a large pan that can be covered on medium-high heat.
2Cut 1 pound of andouille sausage into rounds.
3Cook the sausage for about 5 minutes until it's golden brown.
4While the sausage is cooking, chop up 2 ribs of celery, 1 small yellow onion, and 1 small green pepper.
5Remove the sausage from the pan.
6Add 3 tablespoons of butter into the pan.
7Add the chopped celery, onion, and green pepper into the pan and cook for 7 to 10 minutes until they are slightly tender.
8Add the seasonings: 1 teaspoon of onion powder, 1 teaspoon of garlic powder, 1 teaspoon of thyme, 1 teaspoon of oregano, 1 teaspoon of chili powder, and 1 teaspoon of smoked paprika.
9Add 1 tablespoon of minced garlic.
10Cook the garlic and seasoning for about 1 minute.
11Add 1 teaspoon of salt and a quarter teaspoon of pepper.
12Add 3 cups of unsalted beef broth.
13Add 1.5 cups of uncooked long grain white rice and the cooked andouille sausage.
14Cover the pan, place it on medium heat, and once the ingredients come to a simmer, set a timer for 15 minutes.
