High Protein Cheeseburger Burritos

Directions

  1. 1Cook diced yellow onions over medium-high heat until all water has evaporated and they begin to brown/stick to the pan, without adding any salt.
  2. 2Deglaze the pan with about 4oz of beef bone broth at a time, stir and boil until the liquid is completely reduced, and repeat until you've fully reduced 16oz of bone broth into the onions.
  3. 3Add a splash of soy sauce for extra flavor and color to the caramelized onions.
  4. 4To the same pan, add extra lean ground beef.
  5. 5Toss in the seasoning blend (coarse salt, onion powder, garlic powder, black pepper, oregano, cumin), fire roasted tomatoes, about half of the caramelized onions, and a bunch of fat-free and reduced-fat cheddar cheese.
  6. 6Add diced green onions to the meat mixture.
  7. 7Toss the meat mixture in the fridge for a few minutes to let it thicken up.
  8. 8For the low-calorie caramelized onion burger sauce, add light mayo, plain Greek yogurt, sugar-free ketchup, sweet relish, the other half of your caramelized onions, and garlic, pepper, and salt to taste.
  9. 9Mix the sauce until completely smooth.
  10. 10Assemble the burritos by filling 14 tortillas with the meat mixture and sauce.
  11. 11Store the assembled burritos frozen.

  • 4 tsp sweet relish
  • 0.5 batch caramelized onions

  • 14 tortillas

Tips

  • Place meat mixture in a bowl and refrigerate for ~20 minutes to help it thicken and make rolling burritos easier.
  • When transferring meat mixture to a bowl to refrigerate, weigh the filling to make perfectly evenly sized burritos by dividing the total weight by 14.
  • To reheat: remove from freezer, wrap in a paper towel, microwave for 2 minutes to defrost, then air fry at 375 for 6-8 minutes to crisp up the tortilla.
