Directions

  1. 1Roughly chop tomatoes, onion, jalapeño, and garlic.
  2. 2Sauté the chopped vegetables in a pan with olive oil over high heat.
  3. 3Add a full can of Modelo beer to the pan and let it reduce almost entirely.
  4. 4Transfer the cooked vegetables and reduced beer to a blender and blend until smooth.
  5. 5Pour the blended sauce back into the pan, season with salt and pepper, and bring to a simmer.
  6. 6Add cooked pasta to the sauce and toss to combine.
  7. 7Add crispy pancetta and fresh basil to the pasta, then serve.

Tips
