Creamy Coconut Roasted Red Pepper Jerk White Fish + Broccoli and Creamy Mash

Directions

  1. 1Place garlic cloves and a red bell pepper on a baking sheet.
  2. 2Drizzle oil over the red bell pepper.
  3. 3Roast the red bell pepper and garlic.
  4. 4Pat dry the white fish fillets.
  5. 5Add green seasoning to oil in a bowl.
  6. 6Coat the fish fillets with the green seasoning mixture.
  7. 7Add roasted red bell pepper, garlic, onion, spring onion, thyme, and scotch bonnet pepper to a food processor.
  8. 8Pour some water into the food processor.
  9. 9Blend the ingredients until smooth to create the red pepper sauce.
  10. 10Pan-fry the seasoned fish fillets until golden brown and cooked through.
  11. 11Remove the cooked fish from the pan.
  12. 12Sauté diced onions and red bell peppers in the same pan.
  13. 13Add jerk paste to the pan.
  14. 14Pour in the blended red pepper sauce.
  15. 15Add coconut milk to the sauce and stir.
  16. 16Add broccolini to the sauce.
  17. 17Add some liquid (possibly fish stock or water) to the sauce.
  18. 18Return the cooked fish fillets to the pan with the sauce and broccolini.
  19. 19Spoon the sauce over the fish.
  20. 20Serve the fish with creamy mashed potatoes and vegetables.
  21. 21Pour more sauce over the plated fish.
