10Add soy sauce, rice wine vinegar, water, ginger paste, brown sugar, and white sugar to the wok.
11Simmer for 30 seconds, then add cornstarch slurry.
12Babysit the sauce until it gets nice and thick.
13Add peppers and beef back to the sauce to finish the dish.

Tips
The cornstarch makes a protective coating around the beef to lock in moisture and flavor when cooking.
Do not clean the wok after cooking the beef. The browned bits at the bottom are where the flavor lies. Use the same wok to cook the vegetables and the sauce.
