1Combine flour, sugar, and salt in a large mixing bowl. Add the cold, cubed butter, working it in with your fingers or a pastry blender until the mixture resembles coarse crumbs. Gradually drizzle in the ice-cold water, stirring until the dough begins to come together. Shape into a disk, wrap in plastic, and chill for at least 1 hour.
2Peel, core, and thinly slice the apples. Place in a bowl and add brown sugar, lemon zest, lemon juice, cornstarch, cinnamon, ginger, and salt. Gently toss to coat.
3Preheat oven to 400°F. Roll out dough on a floured surface to a 12-inch circle. Transfer to a parchment-lined baking sheet, arrange apples in the center, and fold edges over the filling. Whisk egg with cream and brush over the dough edges. Sprinkle with raw sugar and dot the apples with butter cubes.
4Bake in the middle of the oven until the crust is golden and apples are bubbling, rotating the pan once. Let cool for at least 15 minutes before serving.
