Chicken and Broccoli Stir Fry

Directions

  1. 1Cut 1 and 1/2 pounds of boneless, skinless chicken breast into 1-inch pieces.
  2. 2Measure out 4 cups of broccoli florets.
  3. 3Mince 2 cloves of garlic and grate 1 tablespoon of fresh ginger.
  4. 4Combine 1/4 cup of soy sauce, 2 tablespoons of oyster sauce, 1 tablespoon of rice vinegar, 1 tablespoon of brown sugar, 1 teaspoon of sesame oil, and 1 teaspoon of cornstarch in a bowl.
  5. 5Whisk the sauce ingredients together until well combined and set aside.
  6. 6Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  7. 7Add the chicken pieces to the skillet and cook until browned on all sides and cooked through, about 5 to 7 minutes.
  8. 8Remove the cooked chicken from the skillet and set aside.
  9. 9If needed, add another tablespoon of vegetable oil to the same skillet.
  10. 10Add the minced garlic and grated ginger to the skillet and stir fry for about 30 seconds until fragrant, being careful not to burn the garlic.
  11. 11Add the broccoli florets to the skillet and stir fry for about 3 to 5 minutes until tender-crisp.
  12. 12If you prefer softer broccoli, add a tablespoon or two of water and cover the skillet for a couple of minutes to steam it.
  13. 13Return the cooked chicken to the skillet.
  14. 14Whisk the sauce again, then pour it over the chicken and broccoli.
  15. 15Stir everything together until the sauce thickens and coats all the ingredients, about 1 to 2 minutes.
  16. 16Serve immediately with steamed rice or noodles.

Tips
